Simple is sometimes Best: quick and easy pasta with Salmon

Simple choices really make life easier in all aspects.
Simplicity is key every time!

I typically meal prep on the weekends, but lately, I haven’t had the time to do that. So, when Sunday evening rolled around, I was thinking to myself, what’s for dinner? Can that also double up as one of my lunch packs for the week? I ended up with this simple, delicious, quick-to-make salmon and pasta combo. I already planned to make salmon, as I like it on my salads.
Initially, I thought about adding sausage to the past, but since I didn’t plan ahead, it was still in the freezer; however, this will be a blessing. The pivot to the salmon was exactly what I needed. It was so good that I finished my serving before making it to the table in between attending to the kids. Chopping the salmon into bite-sized pieces, like I would have the sausage, was a no-brainer.
My preference for pasta is angel hair pasta because not only do I find it easier to cook, but I also easier to eat. If you don’t have the exact ingredients I used readily available, substitution is the name of the game. The beauty of this in-the -moment made-up “recipe” is that the flavor profile can be anything you want it to be and the recipe is more of an estimate so please keep that in mind.

Ingredients:
- 8 oz Angel hair pasta (or pasta of choice)
- 4 salmon filets
- Salt
- Pepper
- 1 tsp Wood fire Garlic seasoning
- 1 tbsp garlic paste (or minced garlic)
- 1 tsp crushed red pepper
- 1/2 tsp hot pepper oil
- 3 tbsp oil
- 1 tbsp butter
- 1/4 cup chicken stock
- 1 tbsp lemon juice
Directions:
- Rinse salmon and pat dry. Cut into bite size cube. Not too small.
- Cook pasta per direction box or preference.
- Season with salt, pepper, and garlic season. Toss to coat.
- On low-med heat het up the oil and add salmon, cook till done about 5 – 7 minutes.
- Removes salmon from pan and set aside. Leave sauce/juice from salmon in pan and return to heat.
- Add butter, garlic paste, crushed red peppers, hot pepper oil, chicken stock and lemon juice to pan. Let it simmer for about a minute.
- Add salmon back into the sauce, add cooked pasta, mix content well. Allow to cook for another 1 – 2 minutes and done.
It might not look like the best thing. But, trust me, it tastes like it. Enjoy!
