Simple Salad with Honey Mustard Vinaigrette w/ Recipe

I am not a fan, let alone big fan of mustard, big I have officially become a bigger fan...lol. All because of this vinaigrette. I have been trying different salad dressing combinations because quite frankly I don't like most of the store bought ones, except for ranch dressing, lol. I came across this recipe some time ago and wrote it down, can't really remember where because there were a lot of them. I've tried a couple in the past and they were yikes, at least for me. I decided it's time to try a new one. Knowing at the back of my mind that I absolutely hate mustard, I thought it was worth the try. As you can imagine, I don't readily have mustard available so I went to buy one. All the while saying to myself , if I buy this whole bottle only to use it once, I will be pissed. But guess what, I am not pissed, I am one very happy mustard lady. All the other ingredients were readily available. Honey and oil are always there and white wine vinegar, I bought a bottle a while ago as it was required in the other dressings I made in the past.

I wanted to eat something light for lunch. I had all the ingredients for a simple salad, so salad it was. Still had some left over coconut chicken so that worked out well. After making the dressing, I tasted it and I was thinking, ok, not bad. I dipped a lettuce in it and then I was thinking this is really good. With all my excitement over the fact that I might have finally found one dressing that I like, I hurried up, took the pictures and next thing I know, I was eating my salad drenched in honey mustard vinaigrette. Half way through, I realized I completely forgot about the chicken in the microwave...lol. I finally added the chicken to it and it was one happy and perfect lunch.

Ingredients
1 tbsp oil
1 tbsp honey
1 tbsp white wine vinegar
2 tsp dijon mustard

Directions
Whisk all vinaigrette ingredients; spread over salad and Enjoy
