Jollof Rice w/ Recipe



Ingredients
1 Red bell peper
1/2 small onion
8oz canned diced tomatoes
6oz canned tomatoes paste
1 1/4 tbsp red hot chilli pepper
1 1/2 tsp dried thyme
1 tbsp curry
1 tbsp paprika
1 tbsp salt or to taste
4 knorr cubes 
2 bay leaves
1/3 cup vegetable oil
5 cups water
5 cups rice

Direction
1. Wash and deveined red bell pepper
2. In a blender combine red bell pepper, onions, diced tomatoes, tomatoes paste and chilli pepper and blend till smooth. If needed add some water to help in blending process
3. Heat up oil in a large pot over medium heat
4. Once oil is hot, reduced heat to low and add the content of blender
5. Add thyme, paprika, knorr cubes, bay leaves, curry and salt 
6. Stir sauce and allow to cook about 2 mins
7. Add 5 cups of water to sauce, stir and cover
8. Bring to boil over med-high heat (add more salt if needed at this stage)
9. while sauce-water is coming to a boil, wash 5 cups of rice (optional)
10. Add rice, turn heat down to low and cover
11.Stir only 1-2 times while steaming ( about 30 mins)
12. Rice is ready when rice is tender and no water remains
