For the past few weeks I've been into trying new things/recipes mostly for dinner. There are some things I've made that I'll probably never make again, while others came out great, and they were really easy to make also. Here are my two new oven dishes.Both recipes i found on all recipes, just made some minor changes.
Here I have my oven fried potatoes. I love these potatoes, they were very tasty and crisp. For dinner, I served them with grilled chicken breast and some steamed vegetables.
Ingredients
6 medium potatoes
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon black pepper
Directions
1. Preheat oven to 425 degrees F
2.Peel potatoes and microwave in a bowl for 5 minutes
3. Cool slightly and cut into wedges
4. Mix oil, paprika, salt and pepper together
5. coat the potatoes with the oil mixture
6. Bake in the oven for 40-45 minutes or until browned
7. Drain on paper towel before serving
Here is my oven fried chicken. This was also very tasty. For dinner I served it with some rice pilaf and steamed vegetables. It's a good munchies for afternoon snack and also taste great on sandwiches.
Ingredients
4 large chicken breast cut into chicken tender sizes
3 eggs
1 cup all purpose flour
1 cup Italian seasoned bread crumbs
1 teaspoon each salt and pepper or to taste
1 teaspoon paprika
1/2 cup vegetable or extra virgin olive oil
Directions
1. Preheat oven to 350 degrees F
2. Place flour in a bowl season with salt and pepper
3. Place the bread crumbs in a bowl and beat the eggs in another bowl
4. Dread each piece of chicken in the flour, then the egg, then the bread crumbs until all pieces are coated
5. Pour the oil into a 9 x 13 inch baking dish
6. Add the chicken to the dish and sprinkle with the paprika
7. Bake in the oven for 30 minutes, then turn each piece and bake for another 30 minutes
8. Remove form oven, drain on paper towel and enjoy.
I haven't made anything new recently, I'm back in my comfort zone, making my regular yummy Nigerian dishes. Will share some pictures with you next time.
